Flour 5 cups
Baking soda 1 tsp
Salt ½ tsp
Cloves (ground) ½ tsp
Ginger (ground) 2 tsp
Cinnamon (ground) 1 tbs
Caster sugar 2 cups
Butter 1 cup
Eggs 2 units
Fruiti-O Apple Nectar 2 cups
Raisins 1 cup
Walnuts 1 cup
Icing sugar 2 cups
Fruiti-O Apple Nectar ¼ cup
Mix flour, baking soda, salt, cloves, ginger, and cinnamon. Beat butter and then add sugar until it’s light and fluffy. Beat the eggs one at a time. Alternately, add the flour mixture and Fruiti-O Apple Nectar. Fold in the raisins and walnuts. Pour the batter into a greased and lined tin and bake at 180°C for about 1 hour or until a toothpick inserted in the center of the cake comes out clean or with a few moist crumbs. Cool the pan about 15 minutes before carefully loosening and inverting onto a serving platter. Cool the cake completely before preparing the glaze. To make the glaze, stir together icing sugar and Fruiti-O Apple Nectar until a thick yet pourable consistency is formed. Add more sugar or Fruiti-O Apple Nectar as it is necessary. Pour over the cake and serve.
